Baked Cod with Ritz Coating

Finally! Michael and I purchased frozen cod weeks ago and are just now getting to make this dish. Although it would have been fun to make a beer batter and deep fry our cod, we opted for a dredged baked version coated in cornstarch, egg, and ritz cracker crumbs.

The Best Cake I Make: Double Chocolate Layer Cake

I would like to share with you the best cake that I make… The recipe was shared with me by my lovely friend Joanna (visit her here) and is by Ina Garten. ¬†You can find the recipe here.

  1. I have made this cake at LEAST four times, and it has been good every time.
  2. The buttermilk in the cake makes the actual cake AWESOME and it is the only from-scratch cake I have excelled at yet.  Who needs Pillsbury?
  3. The coffee that is in the icing and in the cake really gives it a deep mocha flavor!
  4. The icing is really easy to work with and I am getting better at icing it each time.
  5. EVERYONE loves this cake!

Check out my icing writing on the top! ¬†I wish I could show you my last cake’s attempts… it is safe to say that I am getting better! ¬†You’ll just have to take my word for it.

A Multitude of Things

I’ve realized over the last few days that I am a lot of different things to a lot of different people. ¬†I try to keep busy and end up being REALLY busy. ¬†I really love this blog and do NOT intend to give it up anytime soon. ¬†That being said, I am just not able to post 3 or 4 recipes a week like I thought I could. ¬†I hope to pick up with some inspiration soon.. until then, I have a ball visiting my dailies and will try to get to as many of you as I can. ¬†All of your ideas inspire me so much!

Right now, I’m doing a lot. ¬†Of course, I am working my awesome full-time gig as a webmaster / tech specialist. ¬†I work for a school district and it was really nice to see the Class of 2013 hit the field today and receive their diplomas (er… empty folder..).

Second, I am a Team Captain for my charity team that raises money for LLS. We’ve already raised $933 toward our October goal of $5,000. ¬†Fundraisers, abound! ¬†I am so proud of all the work we accomplish: our team is almost 20 people strong this year. ¬†Those numbers will really make a difference near walk time.

Third, I am doing this! ¬†Blogging when I can, trying to do the Show and Share every Monday if nothing else. ¬†I promise I’ll get better. ¬†I love to see folks pinning some of my favorite Happy Wifey content. ¬†I hope to keep delivering, when I can!

Fourth, I have recently become a Thirty-One consultant. ¬†My grand opening party is in just a few weeks and I am super excited to see if it could turn into a way for me to make a little bit more money to get out of this debt we’re currently in. ¬†I am loving the Thirty-One community so far. ¬†I cannot advertise for it on here, but you can reach out if you have questions or want to know more about it. ¬†It is a new, surprise adventure, and I hope I can succeed in it! ¬†Seems like a great company.

And of course, I’m trying to keep up with all of my friends, family, events, chores, special projects, and whatever comes my way. ¬†I’d like to dive more into religion too if the opportunity presents itself (my bible reading did not get me very far in!)… and I am hoping to refine some of my tech knowledge too (most importantly: Sharepoint). ¬†It is a busy, busy summer!

I am a busy woman. ¬†I am busy with a full time job, loving husband, caring friends, improving my home, blogging here, and trying to web design on the side a bit. ¬†Another important part of my life from about spring through late October is coordinating the fundraising efforts of our Light the Night team in memory of my mom. ¬†Our team, “Cindy’s Stars”, is walking to raise money to beat Leukemia and Lymphoma as we have for 4 prior years. ¬†I cannot believe how leading the team has changed me and inspired me to be a better person.
