Enough with the Cookie Bars Already

Oops, I did it again.

Cookie Bar Cutouts @ HappyWifey.net

Turns out that these cookie bars continue to be a crowd pleaser, even when cut into delicate little stars.  I decided on cookie bar stars to celebrate Team Cindy’s Stars in our quest to fundraise to beat Leukemia and Lymphoma.  Woot!

My Favorite Cake

Hello from Spring Break!  I wanted to pop in and share this cake that I make once in a while – it is heavy, delicious, sweet, tangy, moist, and fresh!  I can’t take credit for the recipe… but if you make it, please enjoy it!  AND SHARE IT!  The glaze really adds some calories to this but it definitely worth it… especially when it seeps in!

Here we are… fresh baked and not glazed..

And cooled and glazed and ready to go…

Strawberry Cake @ HappyWifey.netDelicious!  I made this because I knew my coworkers would enjoy it – and strawberries were only .99 cents at my market for 1 container!  Score!  I use shortening and flour to prep my bundt pan so it stays together pretty well :)  Enjoy!  (Recipe here)

Glazed Orange Poppy Scones

Guess what I found at the market yesterday?  Poppy Seeds!

SOO, the only thing I could think of to do was to find a delicious poppy seed recipe.. stat.  The winner came to be Orange Poppy Scones from Shutterbean (I have an addiction to that site! So so good!  If you don’t recall.. that’s where the recipe for Homemade Amaretto came from :)  YES!)

Here we go…

Glazed Orange Poppy Scones @ HappyWifey.net

I love how easy this recipe came together!  I have never made scones before.  They sound so.. complicated!  But with the recipe’s easy steps, I had these babies in the oven in NO TIME!

I did go one step further and decided to glaze these… I have only had scones from say, Panera, where the orange scones are dipped in this delicious, sugar-laced glazed.  I put a small glaze together by combining powdered sugar, orange juice, and milk.  Whisk away, let sit a bit, and then I dunked the scones in after they had cooled a while.

Glazed Orange Poppy Scones @ HappyWifey.net The insides were fluffy, moist, delicious, and OH MY.  Definitely a splurge (calorie wise).  Thank God there are only 8 of these.. any more and I would have a serious scone-eating-problem on my hands.  Make these soon and enjoy!

Blueberry Crumb Muffins

Ohh muffins.  Muffins are delicious but are probably one of the most dangerous foods on the planet.  So flour-y, so sugar-y – but there blueberries in them so they are healthy right?! ha…

Blueberry Crumb Muffins @ HappyWifey.netThankfully, most of these muffins made it into the freezer.  They are so so tempting but I really need to start NOT eating muffins everyday.  So in the freezer they will sit, until I feel like I can splurge on one and eat plain lettuce for lunch :-/  Kidding, but you get the idea.

Chocolate Chip Cookie Bars!

I love simple, easy dessert recipes!  These chocolate chip cookie bars totally flip the bill.  I found the recipe on Real MOM Kitchen and absolutely loved making them.  Lining the pan with foil is the best… these are easy to make AND easy to clean up.

cookiebarsOnce cut, these are easy to store and easy to eat!  I love that they give the taste of chocolate chip cookies but are easier to make (no spooning out batter).  I used a pizza wheel to cut these into cute squares once they were 100% cool.

Taking “healthy” food for lunch is much easier when you’ve got a little square of cookie bar to go with it :D  I am 100% keeping this recipe on file so that I can make these for my future kids’ lunch boxes.. oh yea.  So so tasty.  So tasty… that I have promptly hidden them from myself and have limited myself to two a day.  Must. hide. cookie. bars.  I think these would also be great to freeze.  I think I may also add some walnuts in next time, if I win that battle with my nuts-in-my-baking-hater hubby.  ;-)  Have a great night!

Banana Crumb Muffins

Okay, I understand that you are beginning to think I have a banana problem… considering this blog contains recipes for both banana cake and mini banana muffins already!  But I really am not REALLY banana crazed – I just can’t help but want to bake with my leftover bananas when they get all nice and mushy.

It really wouldn’t happen this often if I, you know, ATE the bananas during the week.  Oh well.. that’s life!  I was tired of making cake and decided these muffins would be perfect to freeze for breakfast treats or desserts.  Please follow this link for the recipe, as I didn’t alter anything.  I did almost double the batter, but only got 18 muffins because I definitely filled some of these guys up too far.
