Baked Meatballs with Parmesan and Basil

We have been grilling nonstop… but recently, we’ve been grilling BORING (albeit delicious) stuff that I haven’t been able to share with you here.  That being said, I decided to make an Italian dish tonight so here we go!  I’ve decided this can be classified as a summer dish, because I used fresh basil from our garden. So what if there is baking involved?!  Pick a cooler day! :)

Galumpkis (Stuffed Cabbage)

One of my favorite meals as a child were the cabbage rolls my Nanny would make, filled with a meatloaf-like filling covered in tomato soup. Ohhhhh.  We bought a lot of cabbage since it is on sale this time of year AND my Dad visiting this weekend… I knew I had to make this dish for him!

I didn’t have an exact written recipe from my grandmother but I think this one came out pretty good.  The carrots and peppers made it come out a little sweeter.  Nanny used to put them in a stockpot to cook… but since my cabbage-wrapping skills are not AWESOME yet, I decided to bake these beauties!  They even reheated nicely the next day!  Enjoy!

Yesterday was a slushy, snowy day and the perfect day to make chili!  Here is a look at Mike’s basic recipe for beef chili.  He likes it with black beans so that is our bean of choice – we also add bacon for flavor and I make him add carrots because I love them!  Enjoy, and be sure to season to taste.

Beef & Broccoli – From Leftover Pot Roast!

My meal plan today says I was supposed to make Italian, but when I realized that we had WAY more leftover pot roast than I was comfortable throwing away I knew that I had to change the plan.  After looking for some inspiration on some different web forums, I thought about the nice fresh broccoli we purchased at the market on Sunday and knew I had to go for stirfry!

This dish was SO easy and I am glad I made it.  I feel good about using up my leftovers and it definitely recreated the beef. I also liked that throwing in raw broccoli (sometimes I use frozen) kept the veggie nice and crunchy. Highly recommend!
