Baked Cod with Ritz Coating

Finally! Michael and I purchased frozen cod weeks ago and are just now getting to make this dish. Although it would have been fun to make a beer batter and deep fry our cod, we opted for a dredged baked version coated in cornstarch, egg, and ritz cracker crumbs.

Baked Cod with Ritz Coating

Ingredients:

  • cod filet, cut into strips or nuggets
  • cornstarch (for dredging)
  • 2 eggs, wisked
  • 3/4 to 1 sleeve of ritz crackers, crushed
  • salt and pepper, to taste

Directions:
After cutting your fish (we use defrosted frozen cod, wrapped indivually), we set up three bowls for dredging. You will have a bowl for cornstarch, egg, and the crackers. Fish is coated in cornstarch, egg, and then ritz crumbs. We seasoned the crumbs with salt and pepper. We cooked our coated fish pieces on a rack sprayed with nonstick spray in a 450 oven until they were golden brown and crunchy! We also dipped our fish in tarter sauce. :)
