This is one of my favorite freezer recipes to make!  I adapted this recipe from the lovely Pioneer Woman and topped my potatoes with steamed broccoli.  After freezing these, we simply take out however many we need for whatever meal I am pairing these with and microwave or bake them, depending on our timing and plan.  I am sure the broccoli doesn’t make them “healthy” but we really like them in a pinch :)  I made almost an entire bag of potatoes so that I would have a ton to freeze without much work!  I served them with Sunday dinner too.

For the entire recipe on PW’s site, please click here.  I used my own spices instead of the Seasoning Salt, and used light sour cream and half and half instead of butter and regular sour cream.

Scooping out the potatoes is the hardest part of this recipe for me.  I always seem to damage the potato “boats”!  After returning the potato mixture to the “boats” carefully, I top with broccoli and more cheese.  Before individually wrapping each potato in plastic wrap, I put the whole cookie sheet right into the freezer so that they keep their shape.  Once hard, I wrap them up and put them in a big freezer bag for easy access.  These will last us quite a while!
