This is one of my favorite freezer recipes to make! I adapted this recipe from the lovely Pioneer Woman and topped my potatoes with steamed broccoli. After freezing these, we simply take out however many we need for whatever meal I am pairing these with and microwave or bake them, depending on our timing and plan. I am sure the broccoli doesn’t make them “healthy” but we really like them in a pinch I made almost an entire bag of potatoes so that I would have a ton to freeze without much work! I served them with Sunday dinner too.

Scooping out the potatoes is the hardest part of this recipe for me. I always seem to damage the potato “boats”! After returning the potato mixture to the “boats” carefully, I top with broccoli and more cheese. Before individually wrapping each potato in plastic wrap, I put the whole cookie sheet right into the freezer so that they keep their shape. Once hard, I wrap them up and put them in a big freezer bag for easy access. These will last us quite a while!
