I have been eyeing the Pork Carnitas recipe on Skinnytaste since I saw it! And we’ve been hoarding a pork shoulder forever too so I was happy to finally buy the rest of the supplies. This stretch meal was ABSOLUTELY delicious. While I made a few modifications that made this meal less skinny, please find the original recipe here.
We used a bone-in pork shoulder because that was what we found on sale a few months ago. Here it is while being seared:
The only other two changes I made were using chopped garlic in oil (not fresh) and using regular chicken broth instead of fat free. After you sear it and spice it, the pork goes into the slow cooker for 8 hours with some chipotle peppers in adobo sauce, chicken broth, and garlic.
While we cleaned out kitchen and packed away Christmas, the pork cooked and cooked. This really does make your house smell amazing! This dish had tons of spice! So much that we didn’t even COMBINE the meat with all of the sauce. Tons of heat!
Deliciousness. We packed it up in tupperware so we can have it for a few meals. We plopped some into flour tortillas with cheddar cheese and light sour cream:
And also made some cilantro lime rice to go with it! And black beans! Our rice was basically white rice with lime juice and chopped fresh cilantro. Nothing fancy
